Chickin Scratch

Summer is almost here!  For us, that means the empty lot across the street will become our garden.  This is where my husband and children will spend most of their time.  I love that the girls get to participate in the whole process, starting with an empty field, watching the plants grow and eventually ending up on their dinner plates. 

In celebration of this change of seasons, I'm giving away a Chickin Feed Trackin' Mat and Primer.  These are also great tools to help teach kids about food, make them aware of what they eat and get them to participate in meeting their nutritional needs.    I bought them for Corrina and absolutely love them.

  1. This is my favorite summertime recipe. I like it because the ingredients are few and can come straight from the garden. Also, these vegetables are ready for picking at around the same time. Finally, this side dish can be eaten with all sorts of meals: burgers, fried pork chops, cat fish fritters, baked chicken, ribs, steak, etc... My family has been eating this simple recipe for decades.

    Summer Salad

    2 tomatoes chunked
    2 peppers chunked
    1 cucumber sliced 1/4" thick and cut in halves
    1/2 small yellow, red, or white onion diced (optional) I prefer red
    salt and pepper to taste

    Dress with oil and vinegar dressing adding fresh minced garlic if desired
